Beef patties with potatoes and tomatoes is a meal perfect for that late Sunday lunch. Prepare it the day before, and then bake it in the oven the next day while catching up with your emails. Make sure you cook it long enough so that the potatoes are fully cooked and break apart. The tomato sauce thickens as it bakes and creates a delicious spicy flavor. I usually like to place a round piece of the potato over each beef patty and then top it off with a slice of tomato and bell pepper . All you need is a salad with lemon and mint dressing on the side, and you’re done!

Beef patties
- 6 cups ground beef
- 1 large or 2 small onion(s) finely chopped
- 2 teaspoons salt
- ½ teaspoon black pepper
- ½ teaspoon red pepper
- ¼ teaspoon allspice
- 6 tablespoons vegetable oil
Potatoes
- 6 medium russet potatoes cut into 1 inch round slices
- Oil for frying
- 4 Roma tomatoes cut into quarters
- 2 or 3 green or red bell peppers cut round
Sauce
In a large bowl mix
- 2 (6 ounce) can tomato paste
- 1 tablespoon pepper paste (optional)
- 1 tablespoon chicken bouillon
- 2 teaspoon salt
- 6 cups water
- 6 – 8 cloves garlic
Beef patties
- Mix the ground beef, onions, salt, black pepper, red pepper and allspice in a large bowl.
- Line a large baking pan with aluminum foil and add 3 tablespoons of the vegetable oil.
- Shape the beef into 4 inch patties and arrange in the pan, about a 1/4 of an inch thick. You’ll get about 14 to 15 patties.
- Broil the patties for about 7 minutes on each side.
- If your baking pan cannot fit all the meat at one time for broiling, then do this step twice.
- Transfer the patties to a platter and set aside.
- Drain the oil in the pan, wipe the pan with paper towel and add the remaining 3 tablespoons of vegetable oil.
Potatoes
- 6 medium russet potatoes cut into 1 inch round slices
- Sprinkle lightly with salt
- In a 4 or 5 quart saucepan, add ¼ inch of vegetable oil.
- When the oil gets hot, add the potatoes in batches, and fry until lightly golden brown. (see note #1 below)
- Remove and place in a bowl.
Sauce
- Add the tomato paste and pepper paste into a small bowl.
- While mixing with a spoon gradually add the water.
- Add the remaining ingredients to the sauce.
Assembly
- Heat the oven to 375˚.
- Add the remaining 3 tablespoons of vegetable oil to the baking pan.
- Arrange the beef patties back in the pan.
- Layer the potatoes, tomatoes and bell peppers respectively over the patties.
- Pour the sauce over.
- Cover and cook at 350˚ for about 2 hours.
- Uncover and cook for another 30 – 45 minutes.
♣ Notes
- 1. Lighter version: Do not fry the potatoes, and add them raw over the cooked patties. However, they will require more time to cook in the oven.
