Ingredients
- 1 cup Orzo pasta
- 1 cup cherry tomatoes – halved
- ½ cup Orange tomatoes – halved
- ¼ cup yellow tomatoes – halved
- 2 Persian cucumbers – halved
- ½ cup French Feta cheese – crumbled
- ½ cup Kalamata olives – halved
- ¼ cup sun-dried tomatoes marinated in olive oil and Italian herbs
- ½ medium onion finely – chopped
- ½ cup Basil leaves – chopped
- 1 Anaheim pepper – chopped
Dressing
- 1/3 cup Olive Oil
- ½ cup Apple Cider vinegar
- 1 ½ teaspoon salt
Instructions
- Cook the pasta according to package.
- Prepare the dressing in a small bowl.
- In another larger bowl combine the remaining ingredients.
- Pour the dressing over the ingredients in the larger bowl.
- Serve.
